You might remember a few weeks ago I attempted chocolate protein pancakes….but then decided to go with french toast. That actually turned out pretty good. Today, I tried pancakes again…but used a recipe that didn’t require cottage cheese. As you can see, I am bound and determined to make protein pancakes that are actually edible!! The pictures from recipes always make them look like your mom’s homemade pancakes…the taste…is more like chocolate flavored cardboard.
I found a recipe on The Fitnessista’s website. I made a couple changes. Here’s the recipe I used:
- 1 1/2 scoops of chocolate protein powder
- 1 egg white
- 1/4 cup skim milk
- 2 T of wheat flour
- 3/4 t baking powder
- 1/3 t cinnamon
- pinch nutmeg
- pinch sea salt
- 1/2 t vanilla extract
First, I whisked together the dry ingredients to ensure there were no lumps. Especially no lumps of protein powder (ew).
When it was thoroughly mixed, I added the wet ingredients and whisked again until it was lump free.
Time to make the pancakes! I heated up some Smart Balance on a skillet and poured the mixture onto the skillet.
Once the pancakes were done, I topped it with half a banana, a little almond butter, and a little sugar free syrup.
These turned out to be pretty good. I love them with the almond butter, it definitely adds good flavor.
A warning for everyone on these: they do not taste like pancakes you’d find at a diner. The taste does reflect the protein powder that’s added to them. The protein powder also changes the texture a bit. I don’t mind that…so, if you think you’d like that, give them a try! It’s a nice, different way to get your protein powder fix.

Totally made these tonight for a “dinner”. The husband was out rock climbing with a friend, and this was the perfect “dinner” to satisfy my need for CHOCOLATE! I also added in 1/2 TBSP of cocoa powder, mmmmmm chocolatey goodness!

I modified this recipe for my supper tonight:
– 22 grams chocolate protein powder
– 1 Tbsp cocoa powder
– 1 Tbsp coconut flour
– 1/2 tsp low sodium baking powder
– 3 Tbsp egg beaters
– 2 Tbsp almond milk
Made three pancakes that I topped with a chocolate syrup made of protein powder mixed with almond milk/water.
