Chocolate Protein Muffins

So, remember my post the other day on recipe inspiration? I wasn’t bluffing…I actually am going to make those recipes! I wanted to make the plum bread a couple days ago but 1.) couldn’t find plums! I went to Trader Joe’s and Whole Foods. Guess it’s not plum season? 2.) Just realized I don’t have any measuring spoons or cups. I don’t trust myself enough with guessing so…not going to risk it! I’ll go pick some up today.

Instead, I made the quick and easy protein fudge muffins. I did guess on measurements for this recipe..I thought I could come close enough. I tweaked the recipe just slightly to fit the ingredients I had on hand. It seemed to work out pretty well!

Chocolate Protein Muffins

  • 2 egg whites
  • 3 T of applesauce (original recipe calls for 1/4 cup of pumpkin)
  • 1 T of wheat flour (original recipe calls for 2 T of coconut flour)
  • 1/2 tsp baking powder
  • 1 T of cocoa powder
  • dash of maple syrup (original recipe calls for Stevia or other sweetener. I swear we had Splenda but I have no idea where it went. Probably under a seat in my car….)

First, I oiled up a microwavable bowl, just to prevent the muffin from sticking. Then, I just mixed all the ingredients together! Pretty easy!

After I mixed everything, I thought it looked a little too liquidy so I added more flour.

Finally, I microwaved it, uncovered, for about 3 minutes. I did 1 minute at a time because I wasn’t sure how long it would take in our new microwave. I basically kept cooking it until it looked “cakey” and was peeling off the sides.

I added some peanut butter on top…because, well, ย I couldn’t resist! It was still hot, and I love melted peanut butter on anything chocolate!

This turned out pretty good! I think I’d describe it more like a cake than a muffin…I guess those are pretty similar though. I’d like to try it again using the pumpkin and definitely using more maple syrup or honey. I used a tiny bit and honestly couldn’t really taste it. This was a good pre-run snack though!

I was pretty proud of myself yesterday…after my run, I made a healthy, veggie filled salad! Usually, I eat the same things everyday because I’m lazy. They normally consist of some kind of breakfast food. But not yesterday!

I had a big salad filled with edamame, red pepper, cucumber, chia seeds, and hummus.

It was pretty good, although I need a new salad dressing. Balsamic is a little too harsh for me…and I always put way too much on!

Overall, it was a pretty healthy eating day. I usually only have issues with what I eat at night. For some reason, my sweet tooth majorly kicks in after dinner. I blame this on my husband since he always has to have dessert after dinner! I was never really like that until I met him (it’s okay, I still love him). I don’t really understand why just after dinner I crave sweets…why not after any other meal? For some reason, the self discipline flies out the window at night. It’s kind of weird…does anyone else have this issue?

    You should try adding a little orange marmalade, red pepper flakes, and a pinch of rosemary to the balsamic w/ olive oil to make a vinaigrette…thats my go-to dressing and a little packs a big flavor punch! The salad looks incredible though…now you’ve made me hungry.

      oooo that sounds like a great idea! im finding out that orange marmalade is really versatile! ill have to try that next time

    I tried to make this recipe too (thanks to your suggestion!) but mine was a huge fail. Not moist enough (used banana, didn’t have pumpkin or applesauce handy) and taste was off. I’ll try it again though, with better ingredients next time!

      haha thats funny…ya im gonna try it with pumpkin next time and definitely more sugar of some sort..it was lacking in that area. but the peanut butter helped out..but it wasnt too bad really. sort of like a vitatop but not quite as good haha
