Thai Coconut Chicken Curry

Why can’t we live in Thailand? Would that be frowned upon? I mean, by people other than our families, who I assume will miss us? Granted we were on our honeymoon, but when we were in Thailand it was like we didn’t have a care in the world. Because we didn’t. We didn’t sit on our computers all day, we didn’t stress out about jobs and money, and we didn’t have anything planned except what we were doing that day. Even that was up in the air most of the time. I often envy those people who say, “I wanna live in Thailand (or insert your country of choice here),” so they go live there. They’re few and far between, but they’re out there!

Of course, it’s a lot easier said than done. When my mind stops floating in the clouds and joins the real world, I realize it would be hard to move somewhere that far away at this point in my life. What would happen when we want to start a family? I guess those babies will probably need some food and diapers so we would probably have to make some money… Maybe I could be a tiger trainer?

It’s only a matter of time before someone gets mauled at that place. That being said, it’s probably not “baby friendly” …so tiger trainer’s out. I guess when I really think about it, I’d probably be okay with just visiting Thailand again..not moving there. 🙂

That doesn’t mean I don’t miss the food!

We tried some amazing and interesting goodies while we were there that we sometimes try to recreate here at home. This past weekend we attempted some Coconut Chicken Curry. It wasn’t quite as good as the real thing, but definitely took us back, for a brief moment, to that beautiful country!

Thai Coconut Chicken Curry

(adapted from here.)

  • 1 clove garlic, chopped
  • 1 tsp minced ginger
  • 1 tsp red curry paste- probably could have used 2
  • 1 can coconut milk- can use light if you want to save some calories
  • 1/3 cup water
  • 1 tsp salt
  • 1 stalk lemongrass- We didn’t have any lemongrass. This is probably an important ingredient not to have. Whole Foods usually has them around.
  • 2 tsp fish sauce
  • 1 tsp brown sugar
  • 2 cups boneless, skinless chicken breasts, chopped
  • 1 can pineapple chunks
  • chopped green onion- also didn’t have this one..oops.
  • half red pepper, chopped- I added this one in myself. Yea, I’m pretty creative.
  • I also added some frozen stir fry veggies

First, I sauteed the garlic, then added the ginger, curry, and the thicker top of the coconut milk and whisked.

Next, I added the remainder of the ingredients except the chicken and pineapple. I let the mixture boil for about 7 to 9 minutes, then added the chicken and pineapple.

Once the chicken was cooked, dinner was served alongside some brown rice!

This turned out pretty good! I think next time I would add more red curry paste and maybe a little hot sauce! I don’t really like spicy foods, but I like a tiny kick. The sauce had a great flavor though. I love coconut milk with anything, it’s almost always good! It’s actually pretty fattening so next time I’ll have to pick up a low fat version!

    hah yep thats a real tiger. it was SO cool we got to play with baby tigers and lay with big daddies. the big ones were obviously kinda scary but for the most part they just laid there. there was one point he got up and looked at me- i was done after that haha

    Hi Amy, I think this is my first comment here 🙂 I was actually born in the Philippines but grew up in the U.S. I’ve also traveled extensively, and one of the places I’ve been to – Ireland – I got to live there for 5 weeks one summer. I absolutely love to travel but unfortunately, the hubby and I can’t afford to do much of it now, haha. We also love Thai food but I’m afraid my Thai cooking skills are not up to par. I’ll have to try your coconut chicken curry, it looks so good.

    That looks so tasty! I’m so jealous of that tiger picture – SO cool!

    I studied abroad in London in college and I would move back there in a heartbeat if I wouldn’t go broke within 7 days of living there!

    I say move to Thailand! 🙂 Billy and I sold everything and moved to Belize together. While I know it’s not the “norm”, we really want to live life to the fullest! In fact, we’re moving somewhere else next spring. 🙂
