I opened up the refrigerator this morning to see a half a can of pumpkin staring back at me. What was I to do with this left over pumpkin? My initial thought was the assortment of baked goods I could make…mm pumpkin scones…pumpkin whoopie pie…my mouth was watering at all the creations I could make. Once I came back to reality…I figured I should probably make something somewhat healthy with this leftover pumpkin (and half a can would probably not yield more than a few pumpkin whoopie pies). Since it was breakfast…what better way than mix it into some oatmeal?
I was inspired by this delicious looking recipe on the Fitnessita’s website. Her recipe is slightly different…but same basic concept. Here are the ingredients:
- 1/2 cup oats
- 1/2 cup nonfat milk
- 1/2 cup water
- half a can of pumpkin
- dash of cinnamon
- dash of nutmeg
- tablespoon flax seed
- dollop of peanut butter
I microwaved the oats, milk, water, and pumpkin for about 2 minutes.
After the oatmeal was nice and hot I added the rest of the ingredients. I also decided it might be even better with half a banana and a squirt of honey. ๐
I love the combination of pumpkin, cinnamon, and nutmeg. It just tastes like the holidays! To top things off, I had a great cup of hazelnut coffee :). Hope you all have a great morning and happy Friday!
