Tonight’s dinner recipe came from one of my fabulous sister in law’s. It’s a recipe for sweet and sour chicken. It’s ridiculously easy and really good. You only need a couple of ingredients:
- Apricot or Orange Preserves. Sometimes I buy sugar free…but it can taste a little funky. Tonight, I used regular apricot.
- Jar of salsa.
- Taco Seasoning
- Chicken Breasts
Ideally, you’d want to rub the taco seasoning on the chicken and let it marinate for a couple hours in the fridge. Tonight, I was too hungry to wait. I rubbed the taco seasoning on the chicken, then prepared the rest of the meal.
Next, I mixed the salsa and fruit spread together in a roasting pan. Then placed the chicken breasts onto the mixture.

Finally, I baked the chicken for about 45 minutes in a 350 degree oven. That’s it!
We served it up with some brown rice and leftover mashed cauliflower.
This recipe is so good and so easy! The combinations sound a little funny at first….but the salsa and jam taste great together. Everything works perfectly I promise! Most of us have all the ingredients on hand already too. Hope you all had a delicious dinner too!
