Breakfast Boredom

I’ve mentioned before that breakfast is my favorite meal of the day. Usually, it consists more of “meals” than “meal.” I eat eggs for lunch, or waffles, yogurt, etc. I could eat breakfast foods all day long. I get overly excited when restaurants serve breakfast all day. But lately, I’ve been hitting a wall when trying to create new breakfast dishes.

I tend to eat a lot of carbs. What can I say? They’re good and you know it! I feel like my meals center around carbs quite a bit. So my new challenge is, coming up with breakfast dishes that don’t center around carbs. You might say, well how about eggs?

I love eggs…but I can only eat so many fried eggs or scrambled eggs with veggies. I need to come up with some more creative mixings or uses…

This morning my breakfast was pretty standard: cereal. Nothing creative about it. Except of course the brilliant move of slicing bananas on top.

I had some Kashi Heart To Heart cereal. It’s actually pretty good. Kind of like Cheerios, except it just tastes healthier. Here are its’ stats:

Not too shabby…but keep in mind this is for 3/4 cup of the cereal. I’m pretty hungry in the morning so I probably eat like, double that. One of these morning’s I’ll measure out 3/4 cup just out of curiosity. That’s the thing with cereal, the nutrition stats are always based on small serving sizes. I’m pretty sure no one is full off of 3/4 cup of cereal. At least I’m not!

I had some Extra Bold coffee to go along with my extra bold bowl of cereal.

I’m a big fan of the Keurig coffee maker. I love that you can make different types of coffee everyday without buying a million bags of coffee. On the downside, you do have to buy the little k-cups. Those tiny little cups of coffee are not exactly cheap. They are fun though…a little too fun to shop for!

As you can see, I brought out the “A Team” mug this morning..

B-A-N-A-N-A-S

My question for ya’ll is…..what are your favorite breakfast dishes? What is your “go to” breakfast…? Any new, unique suggestions on dishes with eggs?

    That sounds delicious but I’m still working on finishing my Cheerios! I’ll get to buying that box I promise! ๐Ÿ™‚

      Ya it’s pretty good. I always like trying new cereals… Snack bars too! Any good suggestions?

    I definitely want to try out those Chocolate PB Protein Pancakes! I tried some this morning that turned out pretty good, but still need some tweaking, but I’ll share anyway…

    1/2 C Quaker Oats
    1/2 C Egg Beaters
    1/2 C Plain NF yogurt (last time I followed the recipe using cottage cheese and they fell apart and didn’t have a nice texture-next time I want to experiment with greek yogurt, but didn’t have any on hand)
    Cinnamon
    Vanilla

    I mashed up some blackberries and used them instead of syrup… YUM!

      oats are a good idea! ill have to throw those in next time. ya i’ve read a lot of protein pancake recipes with cottage cheese but i just never buy it….so i figured maybe greek yogurt could be a good substitute? i think it worked out pretty well. thanks for the comment! ๐Ÿ™‚
