Sticking with my New Year’s resolutions, I made a lunch today that was jam packed with veggies! I recently bought red quinoa but haven’t used it yet…so I thought I’d make some today and stir fry veggies to go with it. I’ve had the “regular” lighter quinoa before but wanted to try the red one out of curiosity.
I haven’t heard that it tastes any different….but the color makes it so much more appealing!
While the quinoa was cooking, I took out some mushrooms, red pepper, spinach, tofu, cilantro, and shaved almonds.Next, I stir fried the mushrooms, red pepper, spinach, and tofu.
The quinoa actually took about 20 minutes to cook. I checked it at 15 (the box says 15 minutes)and there was still a good deal of water in it. Eventually, it turned out as it should!
I added all the veggies to the quinoa and topped it off with some salt and pepper, almonds, cilantro, and a little olive oil. Delicious!
There’s something about colorful meals that I just love! They’re so appealing to me. Which is good right…? The more colors on your plate, the more nutritious and healthy (assuming they’re veggies or fruit….not Skittles).
