French Toast with Grilled Bananas

Since it’s Saturday, I was craving some serious brunch food. Since we’re currently broke, I decided to cook those brunch favorites myself. On the menu for this morning: french toast! I’ve said this before…but I love breakfast foods. Any breakfast food. French toast is pretty much amazing. If I could eat it everyday, I would.

I wanted to try something a little different with the french toast this morning. Instead of slicing up bananas to go on top, I decided to grill them. Grilled bananas almost remind me of plantains, which I love! Cliff and I have tried to fry plantains Cuban style and they turned out pretty good. We went to Miami a few years ago and that’s where I discovered plantains. Grilled bananas can’t quite compete, but close enough.

I cooked the french toast the standard way. I used two slices of wheat bread and soaked them in a mix of eggs, vanilla, cinnamon, and skim milk (I used 3 eggs, about a teaspoon of vanilla, 2 teaspoons cinnamon, and a splash of milk).

Next, I sliced the bananas down the middle, then in half.

Once the french toast was done cooking, I added the bananas to the skillet and cooked for just a couple minutes on both sides.

I basically cooked them until they had nice grill marks on both sides.

Breakfast was served! I just added some bananas to my toast and viola: French toast with grilled bananas! Good stuff.

I served up some Golden French Toast coffee with it (thought that was fitting) and of course, added some peanut butter on top!

Great brunch on a beautiful Saturday morning! We’ve been pretty productive so far…we also made peanut butter banana ice cream (which is AMAZING). I’ll post more on that later.

    Yum! The only thing better than French toast is French toast with PB & Co peanut butter slathered on top

    Your French toast looks delicious! And now I’m dreaming about peanut butter banana ice cream. My favorite smoothies always include PB and banana – best combo! And chocolate, too. 🙂 Hope you enjoyed the sunshine today!
