So, Dallas is officially beautiful. Today got up to 76! I was basically hot, I loved it! I’m so used to Chicago so I’m just waiting for it to drop to -20 any day now…..but it could potentially be spring here right? I know Phoenix gets warmer now and stays that way….so Dallas could too…?
Today’s run was a simple, easy 3 miles. I got Cliff to run with me again (for half of it, which is good enough!) so that was nice. As expected, the Katy Trail was packed with people. I was actually brave enough to wear shorts today. That’s right, I’m not embarrassed or ashamed of my pasty white legs. That’s what Jergens tanning lotion is for (which reminds me, I need to buy some pronto).
Here were today’s running stats:
Marathon Training: Week 6
- Distance: 3.02 miles
- Time: 25:32 min/sec
- Pace: 8:25 min/sec
- Calories: 262 (debatable)
It was a pretty good run although I was feeling tired today for some reason. The weather’s supposed to be nice all week so I’m keeping the runs outside!
Besides marathon training, my friend Tracie is coming next Tuesday and I can’t wait! I’m thinking about doing the 7 day Vegan challenge next week when she comes since she’s vegan. I was thinking earlier about possible dishes I would/could eat throughout the day. Like lunch…what does a vegan eat for lunch? Besides salads of course…but those get boring fast!

It might get cool again, but you just never know in Dallas. One year it snowed on Easter! But it’s great that you’re taking advantage of the sunshine with outdoor runs.
Ohhh, you can eat so many things for lunch. Black bean burritos. hummus & avocado sandwiches or wraps, quesadillas, nachos, veggie tacos, soups! ๐

Yeah, I know there’s gotta be so many things out there…but it’s funny when I think of what I normally eat for lunch or dinner…like, what could I replace that stuff with hmm.. its definitely an interesting, new way of thinking…i know ill have to remind myself of lots of little things with animal products in them that im just used to eating. itll be a good experience im sure!!

For vegan lunches, I like to make grain-based salads. Like wheatberries, wild rice, quinoa, millet, etc etc with beans, chopped veggie, herbs, and oil + vinegar or tahini. Make a batch at the beginning of the week and it’s easy to pack them!
