Strawberry-Avocado Salsa

Finally we had a warm day today in Cleveland. It actually started to feel like summer! I think chips and salsa is always a good summer snack. Regular salsa’s great, but it’s fun to get creative with different, refreshing ingredients. I made one last summer with black beans, corn, and garlic and it was so good! Finally, I had to stop making it because the insane garlic breathe was too much to handle!

I was flippin’ threw the latest Cooking Light magazine and found a recipe for strawberry-avocado salsa. I’ve had mango in salsa before but never strawberries. I love strawberry and avocado in salads so I thought..why not salsa? To go along with the salsa I also made some cinnamon sugar tortilla chips (which was included with the strawberry-avocado salsa).

Strawberry-Avocado Salsa

  • 1 chopped avocado
  • 1 cup chopped strawberries
  • 2 tablespoons minced cilantro
  • 2 teaspoons lime juice
  • dash of salt

The original recipe also called for 1 teaspoon of minced seeded jalapeno. I’m a weenie when it comes to hot food so I didn’t use this :).

Cinnamon Tortilla Chips

  • 4 six inch wheat tortilla’s (original calls for 6 tortillas)
  • 2 teaspoons canola oil
  • 2 teaspoons of sugar
  • 1/2 teaspoon ground cinnamon

First, I tackled the tortilla chips!  I drizzled the canola oil on the tortillas then sprinkled them with the sugar and cinnamon.

Next, I cut the tortilla’s in 12 wedges and lined them up on a baking sheet. I baked them at 350 degrees for only about ten minutes (or until they’re crispy!).

I have to say…these are pretty good on their own. I had to exhibit some self control…that would have been a little sad if I ate them all before actually making the salsa!

Next, I chopped the strawberries, cilantro, and avocado up and mixed them with the lime juice and salt.

Love avocado!  I’ve recently been adding avocado to my smoothies. It sounds kind of gross but works really well! You can’t really taste it it just adds a nice creaminess.

I load my salsa’s up with cilantro. It has such a great flavor!

This is a really tasty, healthy, light snack. Salsa’s are so easy to make and I love the idea of incorporating fruit. Next I want to try pineapple!

    That looks delicious! I’ve never made chips, but I’ll definitely have to try these!!

    Not too long ago I made a strawberry and cucumber salsa, it was good but turned out to be more of a salad. I’ll have to try this, but I’d switch out the cilantro and add the jalapeños!

      ya i would basically eat this as a salad even though ‘technically’ it’s a salsa haha. i love cucumbers i had one too, shoulda added it!
