Banana Blueberry Pancakes

I love Sundays. I love them because they’re such wonderful lazy days where you can sleep in, go to brunch, hit the gym, or sit around in your pajamas watching bad reality tv.

I, personally, love brunch (think I’ve mentioned my love for breakfast a million times). I could eat pancakes and eggs for every meal, but I think my husband would frown upon that. Since we’re trying to save some money these days (skiing in Vail anyone?), I brought brunch to our place, instead of heading out. I had blueberries and bananas that were on the way out, so decided to whip up some pancakes.

Whole Wheat Banana Blueberry Pancakes

  • 1 1/4 cups of whole wheat flour
  • 2 tsp baking powder
  • 2 tbsp sugar
  • 1 egg
  • 1 1/4 cup milk (I used nonfat)
  • 1/2 tsp salt
  • 1 cup of blueberries
  • 2 bananas, mashed

First, I mixed the sugar, egg, milk, and salt in a bowl. Next, I slowly added the flour and baking powder.

Once it was thoroughly mixed, I carefully added the blueberries.

I mashed the bananas with a fork then added them to the mix.

Once everything was mixed, I dropped a big spoon size in a pan with coconut oil.

These are so good! I’m so excited because surprisingly enough, we didn’t eat all of them today, so guess who has delicious leftovers at 5:30 tomorrow morning (seriously, getting up before the sun’s out should be illegal)!

Delicious! Since making them I can’t get “Banana Pancakes” out of my head..good thing Jack Johnson happens to be excellent Sunday music.

 

What do you prefer, pancakes or waffles? I think I’d have to choose pancakes..

    Oh YUM!! Blueberry and banana pancakes are my FAVORITE. With bananas and walnuts on top! That looks like the perfect weekend breakfast!

    I completely agree with your sentiments regarding breakfast. It is a meal I could happily eat all day, everyday!

    I am a total pancake lover, waffle hater. The crevices really stress me out. Syrup and butter get trapped and it is hard to get the correct waffle/butter/syrup ration. Pancakes are MUCH easier! ๐Ÿ™‚

    Hmmm… I dunno. That’s a hard choice! I think waffles win for me. They don’t need as much syrup.

    Ohh I so love breakfast/brunch as well!! These pancakes look delicious! They look like something that you would get at a restaurant so how fun that you made them at home! I love both waffles and pancakes but I generally choose pancakes!
