Pumpkin Chocolate Chip Muffins

Okay, so I think I’ve made it pretty clear how much I love fall.  I went by the grocery store yesterday and picked up two huge cans of pumpkin. This is our last week in Cleveland and apparently I want to make nothing but meals involving pumpkin, so I think I’m going to do so. Every day this week I’ll post a recipe involving pumpkin. My main challenge will be savory meals because there are plenty of sweet pumpkin recipes (I really don’t need pumpkin pie laying around here). I realize Colorado is cold, but I’m not interested in fattening up for the winter! I found a couple recipes so far, so I hope you guys like pumpkin as much as I do!

Anyway, I also have a slight obsession with Pinterest these days. Seriously, if you’re looking for ways to waste your precious time (and who isn’t?) check out Pinterest. It may even be on the same level as Facebook…ya, it’s that addicting. I was surfin’ the net the other day (remember when people said “surfin’ the net”?) and found this amazing looking recipe:

Chocolate chip and pumpkin muffins…all things I love.

So, first up on Pumpkin Week: Pumpkin Chocolate Chip Muffins!

  • 1 cup pumpkin puree
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 1/4 cup sugar
  • 1 1/2 cup all purpose flour
  • 1 teaspoon baking powder
  • 2 tsp. pumpkin pie spice
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup dark chocolate chips. Original recipe used mini chocolate chips but I couldn’t find them.


First, I combined the pumpkin, oil, eggs, and sugar until it was mixed well. In a separate bowl, I whisked the flour, baking powder, pumpkin spice, baking soda, and salt.

Love that pretty fall color!

Once everything was thoroughly mixed, I folded in the chocolate chips.

I greased a muffin pan and baked the muffins for about 25 minutes at 350 degrees.

These smelled amazing! I love the way baked goods smell up a house. It’s such a comforting smell, it makes me think of being home with my family.  Maybe I should buy a candle so I feel that way year round? Actually Walgreens has an amazing chocolate chip cookie candle..I highly recommend it.

These turned out perfectly!

Finally, something I baked that didn’t turn out dry!

I may have had one for dessert last night…and one for breakfast..and half of my husbands. Let’s hope I get into the Boston Marathon so I can stuff my face with pumpkin carbs all day long.

So good! It’s not too pumpkiny believe it or not, so if you’re not a huge pumpkin fan (and you are a huge chocolate fan) you’ll probably still like these.

Hm…what to make next…homemade pumpkin spice latte perhaps? I think so.

 

On a different note, I did register for Boston this morning! That doesn’t mean I’m in though unfortunately. They send you an email in about a week letting you know if you were accepted or not…cross your fingers for me!! 🙂

    I love pumpkin and chocolate together! My pumpkin cravings haven’t started yet, but I sense they’re coming after seeing your pictures!

    I LOVE pumpkin anything! These muffins look amazing! Bookmarking so I can make (several batches ) of these this Fall. 🙂

    Those look delicious! I’m almost ready for pumpkin, but it’s still pretty hot in Dallas, so I’m waiting for a tiny temperature drop before my pumpkin craving officially kicks in. Good luck with Boston! That’s a big deal! 🙂
