Crock Pottin’

I finally cleaned off the crock pot that’s been in storage for 5 months and put it to good use! I think I’m falling for this crock pot of mine. I love the idea of throwing stuff in it and having dinner already done when I want it! The clean up is easy too, which I am all about.

I found this easy and tasty looking recipe on Six Sisters’ Stuff via Pinterest (I know, I need a life). There’s only 3 ingredients: chicken breasts, BBQ sauce, and pineapple chunks. This lovely lady used a hawaiian style BBQ sauce from Target, but we don’t have a Target around here (I think we need to move) so I just used regular BBQ sauce.

I used 5 chicken breasts and 2 cups of BBQ sauce (I wanted some leftovers for lunch today). Since the original recipe called for Hawaiian BBQ, I poured a little pineapple juice in with the chicken and BBQ just to make it sweeter, but you are supposed to drain the pineapple before dumping it in.

The chicken I used was frozen so it’s so easy. I just put the frozen chicken, BBQ sauce, and pineapple in the crock pot and cooked it on low for about 6 1/2 hours.

I love pineapple. Pineapple and watermelon are two fruits I could eat all day everyday.

After about 5 hours (or whenever the chicken was cooked), I used two forks and pulled the breasts apart. You could probably leave them as is, but there’s something about pulled meats, i.e. pork, chicken, whatever that I love!

Dinner was ready! Here’s the hubbies version:

I love me some white bread. But I resisted! No bread for me!

This was really tasty. The slow cooker is so great especially for chicken. I always overcook chicken so it’s dry and bland, but the slow cooker does a great job of keeping the moisture in. Especially when it’s covered in BBQ  sauce :). You could have this in a sandwich, on rice, in a tortilla, or plain like me! When I’m home I’ll have to pick up some Hawaiian BBQ sauce-sounds awesome!

On an unrelated note…Vail opens today!!

We just got our skis delivered yesterday…perfect timing!!

    I am having a love affair with my crockpot! It is the best. Right now I am all about chili recipes and vegetable soups in the crockpot.I really want to branch out to braising meats soon. Your BBQ looks divine!
