I’ve only cooked spaghetti squash once in my life and that was last year. I attempted to cut it open first, then bake it. Trying to cut that thing was incredibly hard. I’m pretty sure I pulled a muscle.
Since I’ve been trying to lighten up on the carbo’s, I bought a spaghetti squash the other day. This time around however, I cooked it differently and it was much easier.
I preheated my oven to 375 degrees and baked the entire squash first. I did poke holes in it before cooking it just to make sure I wouldn’t open my oven and find strands of squash covering the inside (I really hate when things explode. I have yet to have something explode in my oven…usually happens in the microwave).
Anyway, holes in squash, I cooked this bad boy for an hour then let it cool down for a bit. After it was cool enough to touch, I cut it open. Seriously, why did I not think of this before? This was SO much easier! Have you ever tried cutting spaghetti squash? It’s near impossible.
After I cut it in half, I scooped out the seeds and some other fleshy parts. Then it was time for the fun part!
How weird is that that you can just scoop out the center of this vegetable and get pasta-like strands? It’s pretty cool.
I use two forks and just scraped the spaghetti out.
It’s such an intimidating vegetable (or fruit? it has seeds..hm), but once you get past the cutting part, it’s actually really simple.
Once I had the spaghetti out, I just warmed up some turkey meatballs and marinara and had a faux pasta dinner! I thought it was really good but I wondered what my husband would think.
He went back for seconds so I think dinner was a success! 🙂
There are plenty of other fruits and vegetables I’ve never bought because I have no idea what to do with them. One in particular is almost embarrassing to say: I’ve never bought a watermelon. I always buy them precut because they’re huge! First of all, how am I gonna carry that thing to the car? Secondly, I feel like I’d need a saw to get through the thing.

Oh girl, you gotta get a watermelon!! I can eat an entire one on my own within a week, hands DOWN in the summer! They are way more juicy and fresh than the pre-cut kind. You can dooo it!! 🙂

haha thanks for the encouragement!! i feel like i’d have to make a separate trip to the store just for watermelon so i can carry it out. i do LOVE it…i think im basically just lazy haha.
