So, I’ve recently discovered Tumblr. I still don’t really know how it works or get it, but I like some sites in particular because they always have super inspiring photos or recipes up. I found a great (and really easy) recipe for clean cookies on Yogi-Health’s Tumblr. I’m not sure if it came out of the clean eating recipe books or not, but the ingredients would definitely qualify as “clean.”
Anyway, it’s super easy. Here are the ingredients:
Clean Banana and Peanut Butter Flaxseed Cookies
- 2 cups whole wheat flour or pastry flour
- 2 tbsp ground flaxseed
- 1 tsp baking soda
- 1/2 tsp sea salt
- 1 medium banana, mashed. I used 2 small bananas.
- 3/4 cup pure maple syrup
- 1 cup unsalted, natural peanut butter
- 2 tsp of pure vanilla
- 1/4 cup dark chocolate chips (optional)
First, I mixed the flour, baking soda, flax, and salt in a small bowl.
Next, I mixed the remaining ingredients in a separate bowl, except for the chocolate chips.
The only thing that annoyed me about this recipe was the cookie dough was super sticky. Peanut butter can make things a little difficult sometimes…
Once it was mixed up, I folded in the chocolate chips. I dropped a little over a tablespoon of the dough onto a cookie sheet lined with wax paper and baked it for 12 minutes at 350 degrees (could be slightly less/more time depending on your oven).
These smelled amazing!!
My husband described these perfectly: they’re more like mini banana bread cookies than chocolate chip…which is fine by me!
He actually left town this morning and took some with him for breakfast!
They turned out great, but definitely more cake-like than your standard cookie.
Anyway, I hope you all had a great weekend!! Yesterday was a beautiful day here in the mountains! In the morning I went to a prenatal yoga workshop then went fishing with my husband. Check out the bump:
Lookin’ a little thicker!
Speaking of the prenatal workshop, since we’ve only been here since October, I haven’t met very many people. I don’t know if you’ve moved around much after college, but making new friends can be a little tricky sometimes.
Yesterday, I met 4 girls that seem really cool. One in particular is only 2 weeks ahead of me (preggo-wise) and I think is around my age. I felt so awkward when we were leaving the studio because I wanted to ask her for her number…I felt like I was asking her out on a date! I guess in a way, I kind of am haha…gotta get to know each other somehow!! But, I chickened out. Guess I’ll have to start hittin’ up yoga more often!
If you’ve moved around a bit, how do you meet new friends?

Oh they look fantastic! Do you happen to have nutrition stats for them? I am in the same boat as you with not knowing many people. I moved with my boyfriend to Georgia when he got assigned to teach ROTC at a college here, and there’s no Navy base, so we’re the only Navy around. It was very strange going from an almost cult-like group of friends (other officers and their significant others) to just the 2 of us, basically. I don’t mind it at all though!

Oh these look so yummy — love that the hubs took them to eat for breakfast! Would be super tasty with coffee 🙂
PS. you look so cute, can’t say it enough!
PPS. I’d feel the same way about asking the girl for her number, a total “first date” thing hehe, but I’m glad you’re meeting people!!

What a fun workshop! Loving the lil bump girl! And I need to try those cookies. You sure can’t best those ingredients.

It’s so hard making new friends when you move a lot. Trust me know, and I still haven’t figured it out. My friend/co-worker told me to join a gym, that way I am doing something that I have in common with other people.
Your cookies look great! I love banana and peanut butter! Perfect!

Congrats on your pregnancy!
We moved to a new city about a year and a half ago and I swear I am STILL struggling to make friends. There are a few people I greet but don’t really talk to when I go to yoga, which I started not just because I was interested in it but also as a way to meet new people. There was one girl I really liked but I only saw her once and I kind of wish I’d asked for her number too! But I felt like you, like I was asking her out, so I didn’t do it. I kind of regret it now 🙁 Oh well. Maybe the girls you met are in the same boat as you and would like some new friends? Who doesn’t want new friends right? If you see them again you should totally go for it and see if they want to go for a coffee or a smoothie or something after class one day. If someone asked me this I’d be tickled pink!
Do you have any friends who have friends in your area that you could ‘borrow’ until you make some more friends of your own? Otherwise I don’t have too many suggestions for you – my closest friends here are my work colleagues and my boyfriend, whom I live with!
