I’ve been obsessed with my food processor lately. Mostly because of my new nightly ritual of healthy soft serve. My husband loves his ice cream at night and I love me some ice cream too, but nightly bowls of ice cream add up so these healthier soft serve alternatives really do hit the spot!
I haven’t tried anything not banana based yet so I’m a little concerned I’m going to get sick of bananas but so far so good!
I found this soft serve idea on none other than Pinterest (specifically The Primal Home). This particular “soft serve” is dairy free too so it works perfectly if you’re on the Paleo diet or just don’t eat dairy. It’s super easy too, only 3 ingredients: frozen banana, frozen strawberries, and coconut milk-that’s it!
Just toss it all in the food processor and you’re good to go!
I’m not sure how this would do in a blender. I honestly haven’t compared blender soft serve to food processor. I don’t know if a blender would blend it too much…? I’ll have to try it out and get back to you since I know not everyone owns a food processor. You could always try it in a blender and even if it’s smoothie like, throw it in a bowl-voila-ice cream!
I used light canned coconut milk but you could use regular coconut milk. I think the coconut milk gives it a nice creaminess.
I do love the banana chocolate “soft serve” I’ve been making because it hits that sweet chocolate spot. This fruitier version is great though especially on hotter summer nights.
So I had this last night and my husband had mint chocolate chip ice cream with oreos :). I feel pretty good about my choice…although I LOVE oreos. I may have stolen a bite of his :).
If you have a significant other, do you find it hard to eat healthy with them around? I do sometimes because my husband’s so skinny and can basically eat anything…although he’s pretty good about self control…unlike his other half :).

I only see my husband on the weekends so its especially hard to keep our diets in check on the weekend. We like to go out and do things which usually leads to eating at restaurants. I eat super good on the weekday so I save a bit of calories for the weekends.

I love banana ice cream! I always end up adding PB or chocolate… I need to branch out to other fruits! I bet cherry would be really good too.

Its hard to eat healthy at work sometimes cause as a teacher, parents are always making us goodies. Appreciative=yes! But you just have to balance it out. I am the biggest ice cream fan you would ever meet, so I’m so going to have to make that!!! ๐

and I do find it hard at times to eat healthy with my husband because he can eat and eat and you would never know it.
