First of all, sorry for being MIA these past few days. We had some car issues I had to take care of Monday (is that not the worst thing ever??) then actually I was having some problems with my server. Anyway, I’m back (hopefully).
Over the weekend, I decided that I wanted to start planning out my meals for the week and shopping accordingly. I’ll write up a post on meal planning later this week, but first I’ll share my first meal of the week with you: coconut chicken!
I used a similar recipe that I’ve used in the past (found here) and it’s really pretty simple. The main differences this time around were that I baked the chicken instead of frying (baked for 35 minutes at 400 degrees, flipping halfway) and made some yummy sauce to go along with it.
Breading or coating chicken always sounds like such an undertaking but it’s really not. It’s actually pretty simple and the cleanup is not too bad either. I used 3 chicken breasts and coated them first in egg, then dipped them into the flour, coconut, salt, pepper mix.
I could not find unsweetened coconut anywhere- it was killin’ me! I finally found it at a health food store.
There was one more thing I changed about the recipe, I drizzled some butter on top of the chicken before baking :). Butter makes it brown so nicely! I thought about olive oil or even coconut oil, but didn’t think it would have the same effect. Anyone try that with coconut oil?
Yum. This smelled (and tasted) awesome!
The sauce I made on the side and all it consisted of was 8 spoonfuls of apricot jam and 4 spoonfuls of dijon mustard. It basically tasted like a honey mustard-which was great! It kinda reminded me of Chik-fil-A sauce…yes..that good.
I love successful dinners.
Besides cooking amazing dinners (ha), I’ve also been doing some working out and shopping! Since I had to take my car to Walmart to get serviced, I checked out their workout clothing section. Honestly, I’ve never bought any type of clothing from Walmart. I’m usually a Walmart hater…for no particular reason…but this time I found an awesome deal!! These workout tanks:
They were 5 bucks each!! They’re super cute, comfy, and long which I need right now. I was so excited to find them! They actually reminded me a lot of the Champion tanks that Target sells..except cheaper :).
In other shopping news, I ordered some Healthy Bites from the lovely Lindsay at Cotter Crunch.
They’re basically healthy snack bites…which is awesome! Each flavor serves a different purpose. For example, the apple cinnamon is a “fuel bite,” the whey is a “recovery bite.”
I got 12 of them on Monday and only have 4 left…obviously I’m a fan.
