I use the term “fries” loosely on this one. They’re still zucchini’s so don’t get too excited (nothing can replace actual french fries), but honestly, these are pretty darn good.
I’m trying to be creative with zucchini recipes since we have a ton to go through. After all, sautéing zucchini every night might get old. I found this yummy recipe on Delighted Momma’s blog which, by the way, I just discovered and I love it. It’s so cute-she has everything: recipes, fashion, you name it. Most of the recipes are low carb too which can’t hurt!
Anyway, these are super easy and really tasty-I definitely recommend them if you have zucchini and want to try something different. Most of the ingredients I had on hand, I just had to pick up parmesan cheese and breadcrumbs!
I left the skin on and just cut up the zucchini in little fry shapes.
Next, I dipped the fries in an egg/milk mixture, then into the parmesan and breadcrumbs.
I cooked them for about 20 minutes at 420 degrees-easy!
We served them up with ketchup!
These had great flavor-I’ll definitely make them again. We didn’t eat all of them so I had some leftovers last night which were okay, but they’re definitely better fresh out of the oven. They get a little soggy after sitting in the fridge for a day or so.

In other news, I did a lower body workout at the gym yesterday and it was pretty good! I was planning on doing upper body but the area I like to lift weights in was super crowded for some reason (I hate that-don’t they know I want to workout? 🙂 ). So, I improvised with this workout instead:
Third Trimester Lower Body Workout
- Hip Abduction on machine-3 sets of 15
- Hip Adduction on machine- 3 sets of 15
- Walking lunges– 3 sets of 15 (on both legs) holding 10lb. weights.
- Deadlifts– 3 sets of 15 using 15lb. weights
- Sumo Squats– 3 sets of 15 using 15lb. weight

I like your warning: these are not like real fries! Honestly, nothing can come close to french fries for me. I love them, but I’d have to say that sweet potato fries are a good substitute from time to time.
p.s. I did some of your You Tube videos for at-home workout yesterday and they were incredible! I did the 5×50 and could only manage one time through the arm sculpting workout. I’m feeling it today!
