We had a really tasty, easy dinner last night. For some reason at the store the other day, I decided to buy pork tenderloin. Apparently, I didn’t think we had enough pork in the freezer already. Also, I guess I really like pork? Who knew? At a restaurant the other day I ordered a pulled pork sandwich. That’s basically all I eat these days…kind of weird.
Anyway, I bought a pork tenderloin. I found a relatively easy, delicious looking recipe for Moo Shu pork on For the Love of Cooking‘s website. Here are the ingredients I used:
Moo Shu Pork with Stir Fried Veggies
- 1 pound of pork tenderloin
- 3 tbsp of hoisin sauce
- 3 tbsp rice vinegar
- 3 cloves of garlic
- 3 carrots, peeled and diced
- half a green pepper, diced
- 1 1/2 heads of broccoli (if that’s what you call it?)
- dash of Sriracha hot chili sauce
- dash of salt and pepper
First, I made up a marinade that consisted of the hoisin sauce, chili sauce, vinegar, and garlic cloves. I marinated the pork for about an hour (I’m sure at least 30 minutes would work too).
While the pork was marinating, I cut up the veggies and stir fried them in a little olive oil.
I cut up the pork in thin strips and stir fried it in the marinade until it was browned on the outside. Once it was browned, I added the veggies and stir fried the whole mixture for about 10 minutes (or until the pork was cooked through).
We served the Moo Shu pork up with some brown rice. It was delicious and really easy!

It’s another freezing day in Dallas. Our shower is clogged because of a frozen pipe….so I guess no showers in the near future (which is unfortunate for anyone around us). I have to work later today which should be interesting considering both of our cars are stuck in ice. I miss that 74 degree weather!
