We’ve been eating an insane amount of pork lately (in case you hadn’t noticed). So I decided to “spice” things up a bit with the ultimate boring protein: chicken. I thought about the foods we had in the pantry and fridge. We had some feta, hummus, lemon juice, and couscous so a greek dish came to mind.
It turned out to be pretty good and very simple (which I love). Here are the ingredients I used for the chicken:
Greek Style Chicken
For the marinade:
- 2 tbsp lemon juice
- 1 tbsp olive oil
- 1/2 teaspoon greek seasoning
- 2 tbsp of water
- dash of salt and pepper
- 2 cloves of crushed garlic
Rest of ingredients:
- 2 boneless, skinless chicken breasts
- box of couscous- I used Near East roasted garlic and olive oil pearled couscous
- feta cheese to taste
- cherry tomatoes to taste
First, I marinated the chicken for about an hour. You want to marinade for at least a half an hour.
I started cooking the couscous while the chicken was marinating. This was only my second time cooking pearled couscous. It’s pretty good, but I think I might prefer the original kind. The pearled version is more like a pasta and is a bit heavier.
When the chicken was done marinating, we just threw it on the grill to cook.
I cooked some fresh broccoli on the side to go with the chicken. I added a little lemon juice to the broccoli to go with the whole “greek” theme. Next time I’ll omit the lemon juice (little too citrusy…).
When the chicken was done, I sprinkled it with non fat feta and cherry tomatoes then dinner was served! Pretty easy!
It was a good, easy dinner. The best kind!
Yesterday was a good mail day for me. Besides receiving my new Vibrams, I got my passport with my new last name on it (one of the first official documents of my name change!), we got another wedding present (a wine aerator), and for Valentine’s Day, I got this sexy little number from my mother in law:
Perfect for Valentine’s Day. Although I’m actually wearing it right now…(it’s very cozy!). I also just want to point out the brand is called Girls with Guns. Awesome.
