Since the weather has turned around here in the Big D (71 today!), I decided to whip up some homemade ice cream! It might be a little premature (I’m sure it’s not quite Spring yet), but it’s fun to pretend. This was my first experience with the ice cream maker too. We got a Cuisinart ice cream maker as a wedding present. It was super simple to use (and put together) which I appreciate. I can’t wait until summer actually rolls around to start making homemade sorbet with fresh fruit!
Here are the ingredients for this recipe:
Peanut Butter Banana Ice Cream
- 1 1/8 cup peanut butter- I used Peanut Butter Co. Smooth Operator
- 3/4 cup granulated sugar
- 1 1/4 cup whole milk
- 2 cups heavy cream
- 1 1/2 teaspoons pure vanilla extract
- 3 ripe bananas, mashed
First, I mixed the peanut butter and sugar together until smooth.
Next, I added the milk and mixed until the sugar dissolved.
Next, I added the heavy cream.
Using a potato masher, I mashed the three bananas until they were basically baby food. Then, added them to the mix.
Finally, it was time to add the mix to the ice cream machine. (Just a side note, we used an electric ice cream maker, therefore froze the freezer bowl prior to making the ice cream for a couple days).
I turned the machine on and let the mix thicken for about 25 minutes. There’s a hole in the top of the ice cream maker so it’s easy to tell when it’s the right consistency. I just stuck my finger in several times to test it out :).
Mmm smooth and creamy…
Finally, it looked (and felt) like ice cream!
It was so creamy looking! I wanted to dig in right away, but Cliff got to it first though…
I just want to point out his shirt says “cash is king.” Nice.
I actually managed to display some self control and waited until after dinner for a bowl.
We enjoyed some last night sprinkled with chocolate chips.
This is so good. It’s perfectly creamy with the right amount of peanut butter and banana. I love that there are little chunks of banana throughout the ice cream.
I just think homemade ice cream (even though it’s full fat) is so much better than store bought. There are only 6 ingredients in this recipe and they’re all pretty standard items. If you have an ice cream maker, I definitely recommend this recipe!
I can’t wait to try others…maybe coffee next? Or salted carmel?
In other news, I tried my Vibrams yesterday. I ran about a mile and half wearing them. It’s definitely different and I’m pretty sure they’re the cause of my sore calfs today (might still be the 12 mile run from Friday though). They’re going to take some getting used to, but I’m looking forward to trying them out more.
Have you tried Vibrams? Or any other barefoot shoe?

Mike bought a pair a few weeks ago. He LOVES them! No running in them yet, he wears them everywhere though! (Even to Brunch-argh!)

oh my goodness, that looks so good! we went to a party last night and my friend made homemade olive oil ice cream. it was actually pretty good, but i’m going to try to get him to make this — hard to beat pb+banana!! yum!

That ice-cream looks so great!! I run in Newtons which are considered a lightweight shoe, though not quite as barefoot as vibrams. I have weird toes and Vibrams don’t work for my foot 🙁

yea it’ll be interesting to see if the vibrams work for me. i have super long toes ( i had to order a size bigger already). it was hard to tell yesterday so we’ll see! i could be in the same boat as you! hah yay weird feet!

I haven’t even thought about running in vibrams since I just started the whole running thing. Maybe sometime down the road!

This looks so good! I love the combination of peanut butter and banana in sandwiches, I should try it in ice cream form! I’ve got an ice cream maker attachment for my Kitchenaid that sadly rarely gets used.
