Sunday night I was in one of those moods where I didn’t want to “prepare” anything for dinner. I just wanted to look in the fridge and find something immediately. Unfortunately, I didn’t want a dinner that consisted of string cheese and dates (although I’d probably go for that if Cliff didn’t live with me). So, I checked the pantry and found a box of quinoa pasta and Annie’s macaroni and cheese. This was a tough decision. Immediately, I wanted the mac and cheese…because it’s mac and cheese, therefore automatically delicious. But after thinking about it, I decided to try the quinoa pasta.
This pasta is a blend of corn flour and quinoa flour. It definitely looked different than “normal” pasta; there’s more of a yellow hue.
I decided to cook the pasta with some sweet (wild) sausage, tomato sauce, spinach, garlic, red pepper flakes, and parmesan. I guess our vegan days are officially over…(or maybe we just have a freezer full of wild sausage and need to get rid of it! Hm…sausage giveaway in the works?).

Anyway, I added fresh spinach to the sausage and let it cook until it wilted down.
While the sausage was cooking, I cooked the pasta. I followed the directions on the box perfectly since I’ve never cooked quinoa pasta before (it did say NOT to overcook it!).
It tasted pretty good actually! I thought it would be a weird texture but it wasn’t.
This was exactly the kind of dinner I wanted. It was great! I liked the pasta a lot it tasted…like pasta!
Since we’re on the topic of delicious food….I also had a pretty tasty lunch today..filled with veggies too ( I always thought that was an oxymoron…delicious veggies?).
I filled a bowl full of spinach, shredded carrots, red peppers, avocado, roasted chicken, and fat free feta cheese. It was great! On the side I had a couple sliced tomatoes with salt, pepper, and olive oil. I forgot how good tomatoes are with just a little salt and pepper.
I found a salad dressing that I love too!! It’s sort of a random flavor but it’s really great. It’s Annie’s Naturals Shiitake & Sesame vinaigrette.
I feel like I can never find a salad dressing I like (I swear one of these days I will make my own!). But this one is really good. I wish it came in a bigger bottle.
Those were my recent culinary adventures! Nothing too exciting. I’m looking forward to cooking up a storm in our new place (we move tomorrow!). I also can’t wait to try lots of new foods when we go to Thailand in a few days. Happy Tuesday all!

I have not seen quinoa pasta! I feel so behind b/c I just have been exposed to quinoa flakes. I need to get with the times!
