While strolling the grocery store the other day…I had the bright idea of buying kale to make kale chips. I walked over to the produce aisle and saw the sign “kale” and picked out a bunch. Obviously, I was paying no attention to the greens that were in my hand. When I got home…I noticed this kale did not look quite as rough….it basically looked like giant, green leaves. As you may have guessed, this is because I picked up collard greens…not kale.
I’ve never had collard greens, let alone cooked them. I haven’t heard the best of things….but I figured I could whip something up that was relatively tasty and healthy. I found a stir fried collard greens recipe on The Food Network’s website. Here’s the recipe:
- 2 pounds fresh collard greens
- 3 tablespoons pure olive oil
- 1 medium-size onion, minced
- 2 cloves garlic, minced
My recipe was slightly altered. I used half an onion and had a little less than 2 pounds worth of collard greens. Everything else was true to the recipe! I followed directions very carefully since I was terrified these would turn out bitter and not edible.
First, I washed the collard greens. Then, I chopped up the onion and garlic and started to stir fry them.
Next, I chopped up the collard greens in thin strips and rinsed them again. Once the garlic and onion were browned, I threw the greens in.
I cooked all of it for about 5 minutes or until the greens were wilted, but still had a nice green color to them.
To accompany the collard greens….I marinated some chicken breasts in a garlic herb mixture. Then chopped up some red potatoes and carrots.
Next, I threw some Smart Balance butter spread in a roasting pan and stuck it in the oven for a couple minutes to melt. This lines the pan so nothing sticks and gives it some yummy flavor.
Next, I poured the carrots and potatoes onto the pan. I put the chicken breasts on top of the veggies and also put in 3 garlic cloves, unpeeled (I’ve been eating so much garlic lately! I should stay inside I’m sure I stink…).
I wrapped foil over the top and stuck it in the oven at 400 degrees for 40 minutes. Once it was done, I peeled the garlic and spread its’ garlicky goodness onto the chicken. Dinner was served!
The chicken, potatoes, and carrots were actually really delicious! I would absolutely make that again and maybe throw in some other veggies. The collard greens were pretty good too. They are a little bit harsh…so not my favorite…but really not too bad.
