During my daily stalking of other blogs, every now and then I come across a recipe that really catches my eye. But I usually don’t make it until like 2 weeks later for some reason. Even though during that entire time I look at it almost everyday. It’s really pretty creepy. I just daydream about how delicious it will be when I make it. Why not just make it already? I have no idea. I guess I like the anticipation.
Today’s recipes was one of those I’ve been eyeing for weeks. I found it a while back on the Daily Garnish‘s blog and thought it looked great! Speaking of low GI scores…I’m sure homemade breads are low on the scale right? I love carbs too much to let those go by the waist-side. Maybe I just need to constantly be training for marathons so I can carbo load all day long. Anyway, on to the goods!
Blueberry Greek Yogurt Banana Bread
- 1 1/2 cups all purpose flour
- 2 tsp baking powder
- 1/2 tsp kosher salt
- 1/2 cup brown sugar
- 1/4 cup can sugar
- 2 rip bananas (mine were disgustingly ripe)
- 1 tsp vanilla
- 2 eggs
- 1/2 cup greek yogurt- I used nonfat
- 1 cup blueberries
I mixed until it was lump free, then poured the wet ingredients in with the dry.
Finally, I folded the blueberries in!
I poured the mix into a greased loaf pan and cooked it at 350 for about 50 minutes. The original recipe says to cook it for an hour, but I know my oven gets really hot so I didn’t want it to burn. So, somewhere around an hour depending on your oven.
I love the smell of bread cooking…that never gets old.
This bread is quite blueberrylicious.
This turned out really good (obviously, look at it!). ย I think the combination of bananas and greek yogurt made it really moist. You can’t taste the greek yogurt at all so don’t worry, there’s no sour taste! It basically tastes like a giant, fresh, blueberry muffin (how my husband described it at least). You can’t go wrong with that!
I highly recommend making this if you have fresh blueberries on hand! Or strawberries…or peaches…or plums..or chocolate chips…pretty much anything sweet will do. ๐

Wow, this bread looks unbelievably tasty. Bananas and blueberries are a great fruit combo, but for some reason I never thought to include blueberries in banana bread before. Adding Greek yogurt seems like a great healthy way to add some moisture to this.
