We made straight up apple juice the other night and I knew I couldn’t throw away the pulp. It was only apple and a little ginger so I figured there had to be a way to use it. The other juices are a little tough since they tend to be fruits and veggies. Depending on the veggies, I guess you could make bread…but with veggies like celery and kale, I’m not really interested in trying bread yet (mm kale bread). Really just carrots would be great for bread or muffins..but we’ll see. I guess you gotta get creative!
Anyway, this pulp was only apple so it was easy. I found a great recipe for apple muffins that specifically used pulp from a juicer.
Apple Muffins
- 3 cups of apple pulp
- 1/2 cup olive oil, or any oil you’d like
- 3 eggs
- 1 cup honey
- 3 cups whole wheat flour
- 1 tbsp baking soda
- 2 tsp cinnamon
- 1 tsp vanilla
First, I combined all the wet ingredients, then slowly added the dry. The dough is very sticky so I ended up using my hands to mix everything together.
I oiled the muffin tin and filled each cup about 3/4 full. I baked the muffins for about 40 minutes at 350 degrees. It makes around 24 muffins.
In case you can’t tell by looking at them, these turned out really dry. I don’t think that’s the pulps fault, I think it’s just this recipe. The flavor is good but they’re so dry…they’re almost hard to swallow.
We had a few for breakfast this morning and put butter on them and even that didn’t really help. Maybe next time I’ll add applesauce or something to give it some moisture.
I’ll definitely try these again but with some modifications. They were really easy and do have good flavor. Or maybe next time I’ll try a bread..we’ll see.
On a totally unrelated note, Is anyone else really excited about Shark Week? I know I am!

That’s great you used the pulp. If they’re too dry, maybe make them into a bread pudding? I think I’m more excited about Michael Ian Black hosting Snark Week on Comedy Central lol.

You know, I’ve tried making baked goods with juicing pulp. I think the came out ok, but you definitely need something in them for the moist-factor.
