Ohh pancakes..I miss you so. You’re so delicious but full of carbs, gluten, sugar, and every other amazing thing on Earth…therefore, I’m not supposed to eat you for 30 days. Lame.
My husband told me when I tried to make Paleo banana bread to just let it go: don’t try to remake carby meals without the carbs! I guess that makes sense…but that hasn’t stopped me.
I have tried pancakes 3 times since starting Paleo. That’s right…three times (apparently I really like pancakes). I’ve been trying pancakes mostly because I keep seeing Paleo pancakes popping up on blogs and cookbooks so I get excited that there is hope for me after-all!
My first pancake experience was actually pretty darn good. It’s a savory pancake, so I just had it as is with a little almond butter on top. Like I said, it tasted great, but pretty much tasted like eggs. That makes sense considering it’s only made of eggs and coconut flour.
Savory Paleo Pancake

- 3 eggs
- 2 tbsp coconut flour
- salt and pepper to taste
- coconut oil for pan
I really like the smell of coconut flour..mmm.
Just mix the coconut flour and eggs! This creates a big, thick pancake. It can get a little dry because the coconut flour sucks the moisture out so keep that in mind.
This made 2 pretty big pancakes.
Fluffy goodness!
This is a good pancake that I will definitely make again. It’s great anytime (like most pancakes).

I found another pancake recipe using coconut flour that looked amazing. The pancakes looked perfectly fluffy and sweet! I wish mine turned out as good as the pictures looked…
Sweet Coconut Flour Pancakes
- 4 eggs
- 1 cup coconut milk
- 2 tsp vanilla extract
- 1 tbsp honey
- 1/2 cup coconut flour
- 1 tsp baking soda
- 1/2 tsp sea salt
- coconut oil for the pan
This one had such good potential. I think I may have put too much batter in the pan because I had a really hard time flipping these without ripping them up. They tasted pretty good, but were just too much of a pain.
I tried a couple with less batter but they just wouldn’t flip so I tossed it. I was too hungry to deal with pretend pancakes.

This recipe I got from the Everyday Paleo book so I assumed it would work!!
Almond Meal Blueberry Pancakes
- 2 cups almond meal
- 1/2 cup shredded coconut, unsweetened
- 3 eggs
- 1 cup coconut milk
- 2 tbsp coconut oil
- 1 apple, grated
- 1 cup fresh or frozen blueberries
- 3 tbsp cinnamon
I thought these would be perfect for early morning breakfasts!
I just mixed all the ingredients together, then crossed my fingers and threw them on the pan.
Okay, so next was cooking them. I tried. I tried so hard. They just didn’t work. They wouldn’t flip either!
I made a couple, but got too annoyed so I threw the rest of the batter on a pan and made “cookies.”
I cooked the “cookies” at 350 degrees for about 25 minutes.
These are…okay. They taste alright to me so I’m sure I’ll eat them. My husband just tried them and thought they were disgusting so…I guess it could go either way.
He literally took a bite, looked at me and said, “stop trying to remake carb foods without carbs.”
He may have a valid point.
Overall, my favorite is the 1st pancake: the savory one. It’s really good, but honestly just tastes like eggs. So, I have yet to find a good replacement for a sweet pancake.

Wow, I admire your persistence. I have just kissed all carby goodness goodbye. I was such an avid baker and have such high standards for baked goods I realize that a paleo substitute is probably just going to REALLY frustrate me.

The Sweet Coconut Flour pancakes look (and sound) really good! Your husband may be right on (some) fronts though. Like bread sans flour? I don’t think you’ll get exactly what you’re looking for. But other things like cookies I’m sure taste awesome!
