I never ate much casserole growing up. In fact, the only casserole I remember eating was green bean casserole at Thanksgiving (which I’ve never particularly loved). But there’s something about a casserole that intrigues me: you have everything in one dish! At least, you could if you wanted. You could have veggies, meats, beans, cheese, anything you want! In this case, we have (almost) all those things. If you count green chili’s as your veggie, then yes, everything.
Enchilada Casserole
(adapted from Sweet Treats and More)
- 4 chicken breasts, chopped or shredded. Mine were chopped because I’m lazy :).
- 1/2 tsp ground cumin
- salt and pepper to taste
- 3 tbsp of chopped cilantro
1/2 tsp coriander-I didn’t use this because I didn’t have any. I could have sworn I did…1/2 tsp garlic powder. Ditto. Oops.- 1 can black beans
- fresh, chopped green chili’s. The original recipe calls for 1 can (4.5 oz) of chopped, green chili’s. We happened to have bought a large amount of green chili’s so fresh it was!
- 1 can red enchilada sauce (10 oz.)
- 8, 6 inch corn tortillas
- 2 cups shredded mexican cheese
- 1 8 oz. container of greek yogurt. Original recipe calls for sour cream so whatever you want to use!
First, I needed to cook the chicken. I chopped the breasts up and cooked them in a pan with the cumin. Once they were cooked, I mixed them with the green chili’s, cilantro, and black beans.
Now you’re ready to start makin’ a casserole!
Spread half of the enchilada sauce on a greased 11×7 inch pan (or a pan close enough). Oh, first preheat your oven to 375!
Place 4 tortillas down on top of the enchilada sauce.
Next, spread half of the chicken mix over the tortillas.
Then half the cheese mix and half the greek yogurt. I love melty cheese, don’t you?
Repeat the process beginning with pouring the rest of the enchilada sauce through the remaining chicken mix. Cover the dish and cook for 30 minutes.
After 30 minutes, add the remaining cheese and greek yogurt and cook uncovered for another 10 minutes.
This turned out really good! If you love Mexican food, you’ll definitely like this! It’s basically a deconstructed enchilada.

Since it’s Wednesday, I thought I’d do a couple “What I Love Wednesday’s” and “Workout Wednesday’s.” Yeah, I made those both up, I basically want to talk about the shows I’m loving right now :).
What I Love:
Modern Family-I know I may be late to the party, but this show is hilarious. Pretty much every character on it is funny in their own way. Check it out if you like comedies!

Breaking Bad-This could possibly be my new favorite show. It’s about a chemistry teacher who starts cooking meth to pay for his cancer treatment. Yea, it sounds a little intense and maybe Weeds-esque but I think, dare I say, it may be better than Weeds? It has a lot of humor in it but it can also be serious. It’s just a really well done show, watch it!
Workout Wednesday!
Okay, so today’s killer move is:
Renegade Rows
This exercise works so many muscles in your body it’s an excellent full body workout. You’re basically in plank the entire time which requires you to pull your belly button in keeping your abs tight. Try to stay in a straight line too so you’re not arching your back. Once you’re in the correct position, row one arm back (like the picture) keeping your body straight and your hips square. The tricky thing here is not moving your hips side to side, try to keep them straight.
Try 3 sets of 10 with any weight your comfortable with. It works the core, shoulders, upper back, biceps and triceps.
