I saw a recipe for “mashed cauliflower,” and had the bright idea that it could actually replace mashed potatoes! Well, not really..I’m not that naive…I realize mashed cauliflower will never replace mashed potatoes. But I thought it could at least be a healthier, good alternative. I found a pretty simple recipe on the Eating Well website. Here are the ingredients I used:
- 1 head of cauliflower
- 4 cloves of garlic
- 2 teaspoons of olive oil
- 1 cup of skim milk
- 1 tbsp vinegar
- salt and pepper to taste
- 1 teaspoon butter
First, I washed and cut up the head of cauliflower. I placed it into a bowl with a little water to microwave it until it was soft. I also added the 4 cloves of chopped up garlic.
I covered the cauliflower and garlic and cooked it in the microwave for about 5 minutes (or until soft).
After they were done, I let them cool down for a couple of minutes. Then, put the cauliflower and garlic into the food processor. I poured a cup of non fat milk out and added a tablespoon of vinegar to it. The original recipe calls for buttermilk but suggested milk and vinegar if buttermilk wasn’t an option.
I added the milk and vinegar to the food processor along with a teaspoon of Smart Balance spread, olive oil, salt and pepper.
Finally, I pulsed that baby until it was nice and smooth.
Alright, “mashed cauliflower” was done. It was more like….”soup cauliflower” than mashed…but that’s okay.
To accompany my baby food dish, we warmed up some roasted chicken from last night and made some quinoa. I love quinoa. It’s so healthy for you, tastes good, and has an amazing texture.
Once the quinoa was cooked…I added some chopped dried apricots, almonds, olive oil, and chickpeas. A little dash of salt, and it was good to go!
Finally, dinner was served!
So, the mashed cauliflower turned out to be pretty good. It does not have the consistency of mashed potatoes at all…but is still good. It’s more like a soup…or baby food..however you want to imagine it. It does taste good though.
I really like the quinoa too. I love quinoa with dried fruit and the almonds and chickpeas went really well together.
So overall, it was a good, healthy dinner! Hope you all had a great weekend!
