I found a pretty irresistible recipe the other day on Pinterest (the recipe originally came from The Larson Lingo). It was a slow cooker recipe with only 5 ingredients: cream cheese, diced tomatoes, black beans, corn, and chicken. Not just regular old thawed chicken breast either, frozen chicken works just fine. That’s the part I really liked.
All I did was throw everything into the slow cooker and cooked it for 6 hours. You can cook longer if you’d like but I was already getting a late start.
I love the fact that I don’t have to thaw the chicken first. It’s so easy!
In my opinion, anything with cream cheese is guaranteed delicious. Cream cheese frosting, cream cheese in italian dishes, and yep, cream cheese in mexican food! Or just cream cheese on a bagel..that does the trick too.
Every two hours or so I stirred everything up.
Right before 6 hours, I pulled the chicken breasts apart using two forks. I shredded them up then let the mixture cook for another hour-hour and a half.
My husband ate this in a tortilla but I just had some in a bowl with cheese on top.
It’s so good and super easy too. I love slow cookers! They are probably one of the best kitchen inventions ever made.

its seriously awesome and super easy…i love it!! and it makes a lot for leftovers. i used 6 kinda small chicken breasts and there are two of us in my house. love leftovers!

I made something like this the other night without cream cheese. We had so much left over that i dexided to use the leftovers and make chicken tortilla soup. Just added sime chicken broth and enchilada sauce. Turned out amazing!

oo thats a really good idea!! i actually have chicken broth and enchilada sauce…hmmm might have to try. im weirdly loving enchiladas lately…i never liked them before but suddenly am obsessed. it was SO nice seeing you guys at xmas!!

This looks yummy!! Any suggestions on what to replacing the cream cheese with for ppl who don’t like it? Would it still be good if omitted?

hm i feel like cream cheese has a flavor all its own so this might be a tough one but maybe cottage cheese blended up. add a little butter to it too just so its creamier. ricotta cheese or yogurt might work too. i read something that equal parts ricotta and equal parts yogurt works well. hope some of those help! there’s always soy cream cheese too (not sure if you like that or not) but it might be worth a try.

Just to make it difficult….any ideas for a substitution for the cream cheese for someone who is lactose intolerant??:) This looks so good but would it be without the cheese?? Thanks!!

hm dairy free subs…..my first thought would be tofutti’s cream cheese. i think that would be your best bet. i found another dairy free replacement here’s a link to the recipe http://dairyfreecooking.about.com/od/basiccheeserecipes/r/BSCCheeseRound.htm the tofutti sounds easier to me! 🙂
