I’m not sure I’ve ever actually cooked chickpeas before, I usually just throw them into a salad, raw. I’ve heard roasted chickpeas are great though and pretty healthy too so I decided to whip some up last night.
It was so easy and I can definitely see how you can spice them up with pretty much anything you want. Last night I was feeling something on the sweet side so I used cinnamon and brown sugar.
Roasted Chickpeas
- 1 can chickpeas, rinsed and drained
- 1 tsp of brown sugar
- 1 tsp of cinnamon
- 2 tsp of olive oil
- dash of sea salt
So, all I did was dump the can of chickpeas on a baking sheet lined with parchment paper and cooked them for about 30 minutes at 400 degrees. The cooking time definitely depends on your oven. I noticed some of the chickpeas I cooked were burned so next time I might cook for less or even turn the heat down.
Once they were cooked, I mixed them with the remaining ingredients in a bowl while still warm.
That’s it! They tasted great especially since they were still warm mmmm.
I really liked the sweet and salty combination. These make for a great snack or just as a side to your dinner (how I had them last night). I think next time I’ll try them with coconut oil and maybe mix the oil on before cooking.
They were slightly sweet which I liked, but definitely still healthy. At least healthier than these guys:
I have had a serious problem with Easter jelly beans. They are just so good!! Last night I become stronger than the jelly bean and threw them away (after devouring most of the bag…but still!).
I’m going to a wedding in Houston tomorrow so today I’m going to attempt my 18 mile long run. I haven’t ran the past few days just to give my knee a break and I’ve been icing it so hopefully it will make it through. I got a new Ipod nano too so I’m excited to use it! My old one finally gave out. I got a lot of good use out of it though: couple marathons, constantly used at the gym, when traveling, etc. Have you seen the new ones? They confused me at first they’re so tiny!!

like i said. one of my fav snacks! i make mine spicy with cayenne pepper and paprika or sometimes with curry powder!

i LOVE roasted chickpeas. my husband and i eat at the vegan cafeteria on campus (we both work at a large university) and they almost always have roasted chickpeas. i’ve only made them once at home and i just used salt, pepper, flour and garlic powder. really good stuff!
