We eat meat basically every night for dinner. If it wasn’t for my husband, I’d probably eat meat every now and then…mostly because I’m lazy :). Usually, chicken is the easiest and healthiest meat we buy, but I get so burned out on chicken. I try all sorts of different recipes, but they all kinda taste the same (minus a select few). Plus I just hate dealing with cleanup. I feel like I have to spray and scrub everything down since raw chicken was around..gross.
For a while, I was buying huge bags of frozen chicken from Costco but I’m so burned out right now, I have zero desire to deal with those stupid frozen chicken breasts. So lately I’ve been playing around in the kitchen with other meats including pork chops! I like pork chops in general, although sometimes they can be a little dry. I think I really like pork chops because they go so well with fruits like peaches or apples. Last night I tried some pork chops with apples!
This dish was really great and smelled amazing…it reminded me a bit of fall, which I’m not ready for, but it was delicious nonetheless.
Pork Chops with Brown Sugar Cinnamon Apples
- 3 4oz. pork chops
- 2 apples-sliced thin
- 1 1/2 tbsp of brown sugar
- 1 tsp of cinnamon
- 1/2 tsp of nutmeg
- dash of salt and pepper
- 1 1/2 tbsp of walnuts
Another reason I loved this dish was because it was easy! I just cooked the pork in a pan until they were cooked through (or 160 degrees in the middle), then cooked the apples in the same pan with the cinnamon-sugar mix. Easy!
I used pink lady apples because I love them. I think the more tart the apple, the better, but you could use whatever apples you prefer!
Cooking the apples made the entire house smell amazing…basically like apple pie..yum!
I served it with some brown rice and broccoli!
I realize there’s sugar in the pork recipe, but there really isn’t too much. The ingredients are pretty simple so I think overall this was a good, healthy dish. I loved it!
Hope you’re all having a great week-it’s almost Friday!! 🙂

We eat a lot of chicken, too. I also get sooooo burnt out on it but more than anything I dislike handling it and the clean up, ugh!!
We don’t eat read meat very often, maybe once per month but I so like to throw some sausage or pork chops into the mix everyone now and again. This recipe looks nice and tasty!!

You know what? I don’t think I’ve ever had pork chops. Maybe I’ll get some this weekend at Whole Foods!
