Berry Beet Smoothie

This weekend was a big one for me. I took the plunge and added beets to my smoothie. Yep, that’s how crazy I am these days. No late nights out clubbin’ drinkin’ too much…but adding beets to smoothies. That’s as good as it gets :).

Honestly, I didn’t think much of it. I thought it would just add some nice color to an otherwise berry flavored smoothie but I admit, I underestimated the flavor of beets!

The smoothie turned out pretty good but it was a little beety. Next time, I think I’ll add less beets…

This is what I threw in the mix:

Berry Beet Smoothie

  • 1 banana
  • 1 cup of frozen blueberries
  • 1/2 cup of frozen strawberries
  • 1 cup of water
  • ice
  • 3 small beets (roasted a couple days before)

So, I used 3 beets and honestly, the smoothie was good-as long as you like the taste of beets. Next time, I think I’d start with 1 then add more if I feel like it could use it.

You could potentially throw raw beets into your smoothie but I wouldn’t try it unless you have a super high powered blender like a Vitamix. We have a pretty good blender, but I didn’t want to risk destroying it.

Isn’t that color awesome? I don’t even care what it tastes like…it looks so pretty!

I have 2 more roasted beets in the fridge right now so I’d like to try another round of this smoothie. This time, I’ll use 1 beet at a time!

I saw some beet smoothie recipes that call for kale too…I’m not sure I’m brave enough to try those yet…That being said, we do have an absurd amount of kale so maybe I should get adventurous with it!

 

In other news, we have a doctor’s appointment tomorrow! I’m really hoping she can give us some insight on what’s goin’ on with the babe these days…aka when is she coming? I know she can’t really tell us that…but maybe an educated guess? ๐Ÿ™‚

    Oh Amy! That color is FABULOUS! I’ve never added beets to my smoothies, but when I bought my juicer a few months ago, I started experimenting with anything and everything! I made a beet and kale juice once and I wish I was kidding when I say it tasted straight up like lawn clippings! Definitely need to add a fruit to cut the earthy taste!

    I think the most adventurous thing I’ve ever added to a smoothie was juice pulp. It helped to thicken it up a bit and I didn’t have to feel guilty for throwing it away! Oh, or there was the time I used mixed salad greens…tasted the same as spinach only with a little bite! ๐Ÿ˜‰
