Yesterday was all about getting back into the swing of things. One major “to do” on my list is ordering a new passport for Thailand. Yesterday, I went by Walgreens to have passport pictures taken. Well, they turned out pretty beat (no surprise there) but while waiting for the photos, I got to experience a Kombucha drink.
I’ve heard so many things about the health benefits of Kombucha and tried it for the first time over Christmas break. It has sort of an interesting flavor…kind of reminds me of flavored sparkling water. I was going to try the “green” drink…but thought I’d start with a fruit flavored one and ease my way to the green.
Kombucha sort of intrigues me. It’s filled with probiotics, which aid the digestive system as well as the immune system. I’m also interested in it because because you can make it at home. I’ve checked around online and you can actually buy a Kombucha starter kit…I might nab one on Etsy. I’ll definitely keep you posted if I make some!
I had other big plans too yesterday: trying out my new Vibram shoes. I put them on and walked around the apartment for about a half hour…by the end of the 30 min…I was totally unsure if they were too small. I realize they’re supposed to be “snug”….but when I took them off, they had left red marks on my feet. So, I’m assuming they’re too small. My feet are so annoyingly long! So, sadly, I’m sending them back and going a size up.
I’m pretty bummed about the shoes…but I don’t want to get stuck with another pair of shoes that don’t fit (or with black toe nails). So, hopefully I’ll get the new pair soon and finally be able to try them out!
I laced up my Nike’s instead and went for a run on the Katy Trail. Here were my stats:
- Time: 40 minutes
- Distance: 4.20
- Pace: around 9:00 min/mile
- Calories: 367
I was pretty tired yesterday so it wasn’t my best run.
Shrimp Taco’s:
I’m a little behind on researching new recipes to try….but I had a bag of shrimp here and wanted to do something different with it. Shrimp is so easy and versatile. I found a great looking recipe on The Kitchen of a Runner’s website.
Along with the shrimp, I got out 1 yellow onion, red and green pepper. I cut up all the veggies and stir fried them for about 10 minutes.
While the veggies were cooking, I chopped up some cilantro and added it to the shrimp. I also added some chili powder, sea salt, pepper, and lime juice.
I love cilantro! It has such great flavor and is so refreshing!
Next, I took the cooked veggies out of the pan and cooked the shrimp for a few minutes. When the shrimp looked nice and pink, I added the veggies to the shrimp mixture and cooked all of it for a couple minutes.
When it was through cooking, we added the shrimp mixture to a couple tortillas with some guacamole and cheese. We finished it off with a side of black beans.
It turned out pretty good!
Now I’m off for my last workout of 2010! Today’s Crossfit maybe? Hm….200 pull-ups…200 pushups…300 squats…I’ll start off 2011 right: with a sore bum!
