I’ve never had pumpkin butter before. The only “butters” I’ve come across are nut and the grand daddy of them all: butter butter. All I know is, I love pumpkin anything, so I figured I’d give the nut butters a rest and try out pumpkin. I found yet another beautiful recipe on Oh She Glows.
The ingredients are pretty simple, I had most things in my pantry already. Just needed to pick up some apple juice, then was good to go! Here’s the list:
- 29 ounce can of pumpkin puree
- 3/4 cup apple juice
- 1.5 teaspoons of ginger
- 1 cup brown sugar
- 1/2 teaspoon of cloves
- 1/2 teaspoon nutmeg
- 1 tablespoon cinnamon
- dash of lemon juice-original recipe calls for juice squeezed from half a lemon…no lemon here!
This was pretty simple. I put all the ingredients into a sauce pan (EXCEPT the lemon juice) and heated until it started to boil. The mixture can burn, so I kept stirring.
I mixed everything together and turned the heat on medium. I cooked the pumpkin mix until it started to boil, then reduced the heat to a simmer. I let the mix simmer for about 30 minutes while stirring continuously.
After the 30 minutes was up, I added a tiny amount of lemon juice to taste. I let the butter cool off then put it in a jar. Not before trying it though!
This turned out pretty good! I can’t wait to try it in my oatmeal…and maybe thrown into some greek yogurt?

It reminded me of the amazing sunsets over the desert in Arizona. So pretty…makes me miss home!!!
