It was back to marathon prep today. Luckily today’s mileage wasn’t too bad. I was supposed to run 3 miles, but ended up setting my timer for 30 minutes. Before the run, I did a plank 3 times holding for 1 minute each. Here were my running stats:
Distance: 3.65 miles
Time: 30:01 minutes
Pace: 8:13 min/sec
Calories: 315
I was dragging a little bit, but it felt alright. I am definitely getting over this virus I’ve had so that wasn’t the issue. I think I’m just a bit tired from the weekend.
After the run, I came back home for some lunch. I looked in the fridge and saw very little staring back at me. The only thing I could think of was eggs. I didn’t really want boring old eggs though, I was craving something sweet.
I decided to fry up 1 egg and 1 egg white and eat that with wheat waffles and maple syrup! It sounds kind of weird, but all the flavors mix together really well. We serve something similar to this at the restaurant I work at so I knew it couldn’t be too bad!
I may have also had a few bites of peanut butter with chocolate chips….
I am definitely a snacker. I pretty much graze all day long. My issue is that I primarily eat carbs and dairy. I need to fit more veggies into my diet! I need one of those “sneaky chefs” to make food for me with the veggies mixed in without me knowing.
Any good snack ideas out there? Any veggie based snack ideas? I have no problem with fruit….just the veggies! I am not doing well so far with this new year’s resolution…

Veggies is all I crave so what I have been doing is buying big bags of frozen mixed veggies and for lunch and dinner I throw them into my steamer and they are done within minutes. Quick and easy and so yummy!

Don’t get wrong, I’m still craving all the delicious stuff!!! Gelato!!!!! YUM!!! Gotta love cheese too!!
