Today, I had another run scheduled. Get used to these they’re about to take over my life, yay (sarcasm)! Today’s run was a 5 miler. Not too bad, but not too good either. I took this one outside on the Katy Trail. The weather has warmed up a little bit so I thought I’d take advantage of that. Here are my stats from today:

Pace: 8:01 min/sec
Calories: 434
Not too bad. A little fast actually. Pacing myself is a tough one for me. I am definitely one of those types that bolts out super fast when the race starts. I know this will bite me in the behind come mile 13, so it’s something I’m working on.
I also need a serious music makeover. The music on my ipod is starting to become extremely stale. I can only listen to Nelly’s “Grillz” so many times. I mean, I love those grillz, ya ya ya grillz, but I need some new music. Any suggestions??
After my run, I made a protein shake Popeye style. I mixed together some spinach, frozen blueberries, frozen strawberries, chocolate soy milk, and chocolate protein powder.
First, I blended the spinach and chocolate soy milk. I read that this helps break down the spinach pretty well so you don’t have chunks floating around.
It worked pretty well, there weren’t any spinach chunks floating around that I could see.
This was definitely a smoothie! It turned out pretty tasty. I keep pushing the amount of spinach I put in smoothies…so far, I haven’t been able to taste the spinach so I’m going to keep adding more and more until I do!! Then I’ll know my spinach limit…
For lunch, I made an oldie but a goodie. Tuna salad! It’s been a long time tuna salad…I’ve missed you.
I got out 1 can of tuna (80 calories, 18 grams of protein), a little less than a tablespoon of greek yogurt and mayonnaise, 1 hard boiled egg, 2 sweet gherkins (chopped), and a splash of lemon juice. This recipe was inspired by one of saw on Meals and Moves-a great blog!
I just mixed together all the ingredients in a bowl then added it to some whole wheat bread! The tuna has a great deal of protein by itself, but adding the egg and greek yogurt takes it up a notch.
This turned out really good! I will definitely be making tuna salad more often. Usually, it’s covered in mayo (which I have no problem with) so it can be a little unhealthy. But the greek yogurt is a good substitute for some of the mayo and you can’t really taste it (it has a bit of a sour taste).
Finally, I had a good lunch! I have to say, my lunches are typically pretty boring. Usually, I have some eggs or a peanut butter something. I definitely need to spice things up a bit! Any good lunch ideas out there? Preferably easy and healthy? ๐
