Well, I’ve made it through one day, yay! I think I get a bit overwhelmed when I think about the whole month (even though that’s not very long) so I’m trying to remind myself to just take it one day at a time. I had to be at work at 6:15, so I was up at 5:30. Getting up before the sun is out, and being in a hurry, doesn’t really allow much time for making breakfast. So, instead of making eggs or something else, I warmed up my leftover dinner from last night: italian sausage and peppers.
The Paleo Solution suggests just heating up leftovers from dinner for breakfast the next day. Although it’s very convenient, I think it’s going to take me some time to warm up to “dinner for breakfast.” I just love breakfast foods too much. Fortunately, this dinner worked pretty well for breakfast, so it was great!
I had a break at work around 10 and since it was still relatively early, we had some scrambled eggs around. So, I had a second breakfast (I guess..or first lunch?) of eggs and a banana. I usually just grab coffee at work and load it up with half and half (mm love half and half). Not today folks! Today I basically forced down black coffee since I didn’t have any cream options. It was pretty rough, I’m not gonna lie. A little later in the day I had some hot tea for a caffeine kick.
I got home from work around 2 and was hungry so made myself a salad.
I had a delicious salad of aruglua, red pepper, avocado, and cucumber. Oh and some bacon on the side :). There’s also a little peak of an iced coffee I took home from work. I finally got to add something: coconut milk.
So on Paleo, dairy is off limits. So is soy, which unfortunately I didn’t realize until after I bought a jug of soy milk last week. Boo. To replace dairy, they recommend coconut or almond milk, so I picked up coconut. I thought it might be tasty in my morning coffee, so we’ll see. I’ve also seen people use canned coconut milk in their coffee which is much thicker, almost like yogurt. So, I’ll try this milk and if I’m not a fan, maybe try canned coconut milk.
I worked out with the hubby around 7 but before heading to the gym, had a snack of almonds and carrot juice (fresh squeezed)!
I’m sure salted nuts aren’t recommended….but whatever, they’ll have to do!
I think I’m going to have to watch my nut intake (insert joke here). It’s such an easy, healthy snack, but they’re also very caloric so I’m going to try to limit it to a handful a day, it’s gonna be tough though!
We had dinner around 9. Originally, I had big plans of making paleo meatloaf, but it just got too late so we went by Chipotle. I got a salad with chicken, veggies, salsa, and guacomole. Oh, Chipotle is not the same without loads of cheese and huge tortillas. But it was very satisfying nonetheless.
I think I did pretty good today. Eating lunch at my job is tough because there aren’t a lot of Paleo friendly options. Tomorrow I’m sure I’ll just have ย a salad, boring but filling.
Anyway, so far so good, but then again it’s only been 1 day. I did take “before” pictures of myself just to try and see if there will actually be a difference. In case you were wondering, I will not be posting those pics. There’s just no way I’m posting half naked beat pictures of myself online. I know, you’re disappointed.
I’m also doing a “clothes fitting” test. I have a pair of white pants in particular that are pretty tight so we’ll see if they’re any looser at the end of 30 days.

Mmm..I haven’t had Chipotle forever! Looks so, so good! I rarely buy nuts and keep them around the house because they take on the Pringles theme song for me. You know “Once you pop you don’t stop”? lol. Let me know how the coconut milk tastes in Iced Coffee! I want to start making my own at home to save some money and am unsure of what milk I want to use!

I LOVE chipotle burrito bowls – carnitas, rice, corn salsa, lettuc and a little cheese with chips and guac on the side! Not very Paleo (or waistband for that matter) friendly but SO good once in a while! ๐

I think you did AWESOME. I love the pants test. I think that is a great way to chart your progress. After my first few days I became so much less bloated, I found that everything started fitting better!
