Have you guys noticed this trend of making single serving “cakes” in mugs? They’re all really simple: few ingredients, stir in mug, microwave, devour. I can definitely get on board with that. So yesterday, I tried.
I found a recipe that actually looked somewhat healthy so I decided to give it a try. Here are the ingredients:
“Clean” Berry Mug Cake
- 1/4 cup quick oats
- 1 egg
- handfull of blueberries
- 1 tbsp of milk
- little bit of sweetener. I used Splenda.
Mix it all together in a mug, then microwave for a minute of 1:30.
I swear I followed the directions correctly!
I noticed right away that it seemed a little eggy. The recipe called for 1 egg though so I trusted it.
It doesn’t look all bad does it? Honestly, it just tasted like an egg with blueberries which turns out, is not my favorite combination. Anything you cook in the microwave always has a spongey element to it and I’m okay with that, it was just the taste.
What a waste of blueberries…sad. I found the original recipe here and her’s did look better than mine so who knows what happened. Maybe I’ll give it another try. By the way, I love her website. I just found it this weekend and everything she posts motivates and inspires me to be healthier. Check it out!
I mentioned above that mug cakes seem to be catching fire these days. Here are a couple other’s I’d love to try!
Nutella Mug Cake yum!! That one might not be considered healthy but at least the portion is small.
Gluten Free Chocolate Mug Cake. ย Yum.
Carrot Mug Cake! This one is a little more time consuming but probably worth it!
Paleo Mug Cake. This might be next on my list. I’ve made a few recipes off his site and he has great stuff!
Okay, that’s enough with the mug cakes. They’re kinda fun though right? The key for me is getting them to actually taste good :).

Boston baby!
The Boston Marathon is 7 weeks from today. Yikes!! I can’t believe it’s coming up so fast. My latest long run was 16 miles on Saturday and it was okay. The temperature here was perfect but we had some crazy wind which made running sort of a pain. Speaking of pain, I was really feelin’ it by mile 14. Hopefully my legs get it together because that’s a little soon to feel like giving up.
Anyway, I’m really excited! I’ll wear my jacket all the time. Once I get my medal, I’ll wear that too! I always thought it would be awesome/hilarious to walk around wearing your medals. Maybe I’ll give it a try. ๐

I tried the paleo mug cake a few weeks ago. It turned out ok but I just wasnt really a fan of the taste! I may have to try some others though ๐

oh really? bummer. i want it to work so bad!! haha maybe its just one of those things thats too good to be true..a kinda healthy, quick dessert…maybe they dont exist!

I hate when you make something and it doesn’t turn out. I wasted a whole jar of peanut butter and 3 cups of flour trying to make biscotti, yuck! It was a horrible mess!!

That Boston jacket is awesome!! I love the pumpkin protein muffin (mug cake) from Clean Eating Chelsey! ๐ It has a lot of chia seeds in it that give it a great texture!

I made the Nutella one when I didn’t have an oven to make real cakes and it was quite good! I’m sad that the healthier blueberry one didn’t work out though, it had so much potential.
Also, it’s so cool that you are doing the Boston Marathon (and that the jacket is so neat). Good luck!
