I’m not on a strict Paleo diet…not even close. I do still like to incorporate some Paleo recipes into my life though and for some reason, I really want Paleo pancakes to work. I’ve tried them in the past and they always turned out okay…but mostly kinda dry and eggy.
I was doing my daily blog stalking when I came across an awesome Paleo pancake recipe on The Body of a Mother’s blog. Her pancakes actually looked like pancakes: big and fluffy! I also noticed she added a bit more to the pancakes like agave, cinnamon, and vanilla so I was thinking this would help them taste better (or as a pancake should taste!). I decided to give them a try yesterday for lunch.

- 1/2 cup coconut flour plus 2 tbsp. She just used 1/2 cup but my batter was actually pretty runny for some reason. Maybe an altitude thing?
- 5 eggs
- 2 egg yolks
- 1 can of coconut milk (you can use light or regular..I only had regular)
- 2 tbsp of honey (or agave nectar)
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1 tsp of baking soda
First, I beat the eggs together, then added the coconut flour and milk and mixed it all up.
Then I added the rest of the ingredients and mixed thoroughly. I greased a frying pan and poured the batter out just like I was cooking “regular” pancakes.
These made a lot of pancakes…which was great! I ate a couple yesterday, then just had some this morning, and still have a few leftover for later. That being said, they took a little longer than I anticipated just because you have to let them cook (obviously) and there’s only so much room on the pan, but I’m glad they make a lot so I can spread them out over a few days.
These are the best Paleo pancakes I’ve ever made. They had a great coconut taste and were slightly sweeter than the other ones. They also weren’t super dry. That coconut flour can suck the moisture out of anything so keeping things moist when using it is kinda tough.
I cut up some strawberries and tossed them on top. I didn’t even use syrup because I thought they were good enough without it!
These are a great “regular” pancake substitution because they’re much higher in fiber (coconut flour is pretty high in fiber) and low in carbs. Next time I’ll buy light coconut milk just to save some calories. These were great though I definitely recommend them if you’re on Paleo or just want to try out a Paleo/low carb recipe.
