Oooo we had a great dinner the other night. One of the many wonderful things about coming to my husband’s parent’s house is they always have fresh fish and other meats on hand. This time around, the fish of choice was Mahi Mahi. They had salmon, tuna, and other’s but honestly, I prefer salmon and tuna raw over cooked. It’s like buttah raw.
Anyway, dinner was my responsibility (which was fine). People always assume I’m a really good cook because I have a blog. I usually let them assume that since I don’t cook for many people but in reality, I’m a beginner in the kitchen. I do like to cook (especially bake) but I can’t claim I’m a master chef, at least not yet. I’m workin’ on it though.
Before starting the fish, I actually whipped up a side salsa to go with our tropical themed dinner. I love salsa’s with fruit and tons of cilantro. Cilantro is probably my favorite herb; it has such a great taste. The salsa was super easy and just reminds me of summer which I miss desperately right now.
Tropical Salsa
- 1 ripe mango, diced
- 1 ripe avocado, diced
- 1/2 cup diced pineapple (can use fresh but I just used canned)
- 1/4 cup minced red onion
- 1/4 cup minced red pepper
- 3 tbsp chopped fresh cilantro
- 1 tbsp lime juice (I added more to taste)
- 2 tsp minced jalapeno
- 1 tsp minced garlic
- salt and pepper to taste
I’ve made salsa’s with mango but never with pineapple. It was great!
I mixed everything up then let it sit in the fridge for about an hour. We meant to eat this as an appetizer with chips beforehand but ended up serving it with the fish.
Next up was the main event: Mahi Mahi.
Macadamia Nut Crusted Mahi Mahi
- 1 1/4 cup chopped macadamia nuts
- 1/2 cup panko bread crumbs (Japanese bread crumb. You can find this in most stores)
- 2 tbsp all purpose flour
- 1/4 cup butter, melted
- vegetable oil for brushing filets
- 4 mahi mahi filets
- salt and pepper
- 2 tbsp of coconut milk
I set the oven to 425 then mixed the nuts, panko, butter, and flour together.
This mixture smelled SO good!
I placed foil down in the baking pan and drizzled oil over it. I placed the fish in the pan, salt and peppered them, then cooked them for 5 minutes. Next, I poured the coconut milk over the fish, then the crust on top. I baked the fish for about 20 minutes.
The fish was actually pretty easy to make. My mother in law had most of the ingredients except the panko and coconut milk.
I didn’t take pictures of this, but we also made tropical rice. This turned out amazing. I definitely recommend this if you like coconut flavor. It was really easy too.
Coconut Rice
- 1 cup coconut milk
- 1 1/2 cups water
- 1 tsp salt
- 3/4 tsp sugar
- 1 cup long grain white rice
- 3 tbsp fresh, chopped cilantro
Just combine the coconut milk, water, salt, and sugar and bring it to a boil. Add the rice and stir then reduce the heat to a simmer. Cover the rice then simmer for about 20-25 or until all the liquid is absorbed. Let it sit for about 10 minutes then fluff it up and add the cilantro. So good!
I have to say, this dinner was pretty darn good. I can’t take credit for the recipes though that will have to go to the Food Network . Everything was relatively simple and really delicious!
Good food and good company! Can’t ask for more.
