Unfortunately, I don’t have an Easter post for you guys. My Easter was pretty uneventful actually. It’s just not the same when you’re not with your parents (or in-laws…they are now under the category of “parents”). I thought about doing an Easter basket or making something fun like cinnamon buns, but then I’d just end up eating all of it :). It sounds like an exaggeration, but it is so not I promise! So, I bought us a couple Cadberry Cream Eggs and that’s how we celebrated…delicious.
I didn’t make anything fancy this weekend, but I did try making homemade fruit snacks for the first time. They were surprisingly easy!
Homemade Gummy Fruit Snacks
- 1 cup mixed berries
- 1/4 cup water
- 1/2 cup applesauce
- 1/2 cup fruit juice-I used apple juice
- 2 envelopes of gelatin
I’ve never used gelatin before, but it can be found in the baking aisle (in case you were wondering).
This was super easy! First, I mixed the berries and water in a saucepan and heated until it started to boil. I let it boil for about 5 minutes or until the fruit was soft.
After the fruit was soft, I blended it up in a blender then transferred it back to the saucepan. I mixed the applesauce in with it then brought it back to a boil. Once it started to boil, I took it off the heat and covered it.
I let the applesauce/fruit mixture sit for a couple minutes. Meanwhile, I poured the apple juice in a bowl and sprinkled the gelatin over it. I let it sit like that for a couple of minutes, then added the fruit/applesauce mixture.
Once it was mixed up, I poured it into a 9×13 pan and refrigerated it for a couple of hours. If you have a smaller pan, that would work too, I just happened to not have one.
After a couple hours it was perfect! I cut it into slices and rolled it up like a fruit roll-up.
Turned out great!! It was way easier than I thought too which is always nice.
We have a dehydrator so I think next time, I might attempt fruit leather in the dehydrator. Baby steps..
In other news, the Boston Marathon is 1 week from today!!! I can’t believe it!! I’m getting super nervous for it and not just because I’m pregnant. Yesterday I went on an 8 mile run that was cut short because of knee pain. This is NOT a good time knee!! This week I’m supposed to run 3 miles, then 2 two times. I’m honestly not sure I’ll run any. I just need my knee to stick with me a little longer then hurt all you want!! I’know that’s stupid, but I would be so frustrated if I couldn’t run because of my knee.
Anyway, I’ll keep icing this week and foam rolling my legs like crazy. Hopefully it will help. Cross your fingers for me!

I honestly can’t tell you how excited I am about this recipe–I used to love fruit snacks (in an I-ate-WAY-too-many-of-them sort of way) and haven’t had any in years now…these look delicious and lack all of the extra preservatives, will have to try!
